Easy Vegan Gingerbread Cake Recipe - Perfect Holiday Treat!

This Vegan Gingerbread Cake is a delicious treat, with warm spices and soft texture. It's an effortless holiday dessert! Sprinkle some powdered sugar on top and savour it with your favourite coffee or hot chocolate.

Ingredients:

  • 1.5 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves & nutmeg
  • 1 tsp baking powder
  • 1/4 + 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1 cup non-dairy milk (like cashew)
  • 1 tbsp apple cider vinegar
  • 1/4 cup oil (e.g., avocado)
  • 1/4 cup molasses
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F. Prep an 8 x 4-inch loaf pan.
  2. Sift flour, ginger, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt.
  3. Mix non-dairy milk with apple cider vinegar; let sit for 5 mins.
  4. Combine oil, molasses, sugar, and vanilla. Gradually add milk-vinegar and flour mix.
  5. Pour batter into the pan. Bake for 40-45 mins.
  6. Cool, slice, and dust with powdered sugar. Enjoy with coffee!
